THE OPTIMA OVEN: Oven featuring annular tubes in metal ducts

AN EFFICIENT OVEN

The radiant heat of the annular tubes provides perfectly even heating and excellent baking quality.
The OPTIMA’s all metal design guarantees working flexibility and reduced energy consumption.

STANDARD EQUIPMENT

  • Electro-mechanical control panel.
  • Stainless steel front.
  • Stainless steel hood with non-drip grid and steam extractor.
  • Halogen lighting.
  • Toughened glass doors.
  • Refractory baking slabs
  • Dual steam control pushbuttons (on both left and right columns)
  • An oven loading unit and a holding stand.

CHARACTERISTICS

Steel tubes The oven uses 21.6 mm (8 inches) diameters and 3mm (0.12 inches) thick TU37B type steel tubes. Each tube is curved and then perforated on a numerically controlled drilling bench before being welded and then tested at a 400 (5800 psi) bar pressure in order to guarantee its sealing. Working pressure is approximately 140 bar (2031 psi).

The tubes are covered by a 10-year guarantee

Heating system On the OPTIMA oven, we use separate (1) cold-drawn, weld-free, circular tubes in the heating section in order to produce a major heat exchange surface area; these tubes are laid horizontally for heat exchange with the baking compartment.

Energy transfer from the hearth (2) to the baking compartment (3) is based on the water phase change and on the natural circulation of the water / steam mixture through the tubes.
